Gardenia Blue is a blue pigment obtained by enzyme treating on geniposide contained in gardenia fruits ,and get genipin,then produced by complexing with a primary amino group. It is soluble in water and relatively stable to heat and light under the neutral and alkaline conditions

1)Dark blue powder, soluble in water, Insoluble in petroleum ether and other organic solvents
