Vital Wheat Gluten,is produced by the separation from the carbohydrate component of high grade wheat flour. It is the water insoluble complex protein fraction.It is a cream coloured,free-flowing,food grade powder.When rehydrated it ragains its visco-elasticity.Vital Wheat Gluten forms a visco-elastic dough with strong film forming capability when fully hydrated. It rapidly absorbs 150% of its own weight of water. Vital Wheat Gluten’s main applications are listed as follow:Bread and Biscuit Baking, Breakfast Cereals , Pasta and Snacks, Meat, fish and poultry products, Pet Food and Animal Feed.
