Vinification: Following the tradition begun by José Maria da Fonseca in the last century, fermentation is stopped when the amount of residual sugar reaches 90g / l with an alcohol content of 18 º C. The skin contact lasts five months. In the month of March following the vintage masses are pressed and the wine that results is then packed away with the wine tear.
Aging: The crops that make up this wine aged in used oak barrels used to the bottling date (October 1999).
