1. IMO has low sweetness which is about 40% that of cane sugar.
2. Its low viscosity is similar to that of cane sugar which results in an easier manufacturing processing than maltose.
3. IMO retains moisture well and therefore it not only prevents starch degradation, but also stops crystallization of cane sugar and glucose.
4. IMO assists the growth of bifidobacteria and the unfermentable sugar can’t be easily absorbed. It is not easily utilized by pathogens that cause dental caries.
5. It is often applied in the manufacture of functional beverages, energy drinks, juice, yoghurt drinks, milk, ice products, milk formula, functional health food, jelly, candies, cakes, alcohol…etc.
