This product is light yellow to brown powder, soluble in water, insoluble in ethanol, with strong hygroscopicity.It is also a light yellow slightly viscous liquid. Its main function is to hydrolyze sucrose into glucose and fructose (invert sugar). And change its optical rotation.

This product is an enzyme preparation. The main purpose is to decompose sucrose into conversion sugar, so as to obtain a higher solubility than sucrose, not easy to crystallize sugar high concentration sugar solution, used in ice cream, chocolate, candied, various candies, jams, etc. It is also used to produce artificial honey and to remove sucrose from food.

By aspergillus producer: cut at the glucose end to obtain d-glucoside.The optimum pH value is 4.2~4.5, and the optimum temperature is 60℃.
