Black ginseng means 9 Times-Steamed and dried Ginseng. By 9 times' efforts of steaming and drying, color of wild ginseng becomes black like picture below. So it's called Black ginseng in Korea. and the number of its ginsenoside in black ginseng becomes 7 to 30 times comparing to red ginseng's ginsenoside.
For reference, the dried but unprocessed root is called white ginseng. The root that has been steamed and dried 2 ~ 3 times is called red ginseng.
