Properties: White or colourless rhombic crystal or prismatic
crystal, easily soluble in water, insoluble in ethahol,
relative density 1.63, melting point 34.6'C, when heated
to 180'C, it may lose crystal water, convert to anhydrous.
Uses: In food industry, it is used as agent for bake,
Prevent oxidizing, in dairy product, it is used as
Emulsifier, prevent albumen conagulation. In solid
Beverage, it is used as buffer, chelate, agent, emulsifier.
