Technology of submerged vinegar production

In modern productions normally the submerged process is used, with powerful aeration systems supplying the whole fermenter evenly and continuous with oxygen.

 

Nowadays these fermenters allow for a production of 14 to 15% acetic acid in the semi-batch process and up to 20% in the fed-batch process.

 

Innovative Technology

In the fed-batch-process vinegar fermentation is controlled by the latest Siemens-PLC system S7. Besides actuating all motors as well as the pumps and sensors, it controls the whole process, i.e. the exact dosage of alcohol, water and nutrients, according to a given recipe. The process values (total concentration, residual alcohol, desired acetic acid concentration) are entered via a Touch Panel, which displays the fermenter and its main parameters.

 

In the production of vinegar, with up to 20 % acetic acid, the reliable dosage of alcohol for total process control requires our patented alcocontrol system. The system consists of a microcomputer with LCD display and our patented alcohol sensor.

 

The complete fermentation plant generally consists of the following main components:

§ Stainless steel tank with cooling coil

§ Alcocontrol – system for the on-line alcohol measurement

§ SIEMENS PLC - process control

§ Stainless steel pumps

Sensors (filling level, temperature, alcohol volume)
