Nowadays these fermenters allow for a production of 14 to 15% acetic acid in the semi-batch process and up to 20% in the fed-batch process.
Innovative Technology
In the fed-batch-process vinegar fermentation is controlled by the latest Siemens-PLC system S7. Besides actuating all motors as well as the pumps and sensors, it controls the whole process, i.e. the exact dosage of alcohol, water and nutrients, according to a given recipe. The process values (total concentration, residual alcohol, desired acetic acid concentration) are entered via a Touch Panel, which displays the fermenter and its main parameters.
In the production of vinegar, with up to 20 % acetic acid, the reliable dosage of alcohol for total process control requires our patented alcocontrol system. The system consists of a microcomputer with LCD display and our patented alcohol sensor.
The complete fermentation plant generally consists of the following main components:
